Anhydrous milk fats and butteroil are pure milk fats, derived from milk or the proteins obtained from milk, with the water and non-fat solids removed. They are used in a similar way to ghee, a pure milk protein traditionally used in Asia, and give a rich flavour and creamy texture to the dishes in which they are used.
